Beef in onion sauce
Large pieces of beef layered with raw and caramelized onions, then gently cooked in a soy‑garlic braising liquid until very tender.

Ingredients
- Beef — 1 kg
- Onion — 1.4 kg
- Lamb fat — 60 g
- Butter — 100 g
- Sugar — 1 tsp
- Soy sauce — 3 tbsp
- Garlic — 6 pcs
- Vinegar — 1 tbsp
- Fresh thyme — 4 pcs
- Bay leaf — 2 pcs
- Black pepper
- Salt
Steps
- Slice all the onions thinly and set aside.
- Melt the lamb fat in a large heavy pot over medium heat, add the butter and let it melt.
- Put about half of the sliced onions into the pot with a pinch of sugar and cook over medium heat, stirring occasionally, until golden and caramelized; remove the caramelized onion and reserve.
- Cut the beef into large chunks.
- Arrange layers in the same pot: a layer of the remaining raw sliced onion, a layer of beef pieces, season with salt and black pepper, then spread some of the reserved caramelized onion and a little butter; repeat as needed to use the meat and onions.
- Crush or finely chop the garlic, mix it with the soy sauce and the vinegar, then pour this mixture evenly over the layered meat and onions.
- Tuck the thyme sprigs and bay leaves among the layers, cover the pot with a lid and cook gently over low heat until the beef is very tender and the onions have formed a saucy base.
- Remove and discard thyme stems and bay leaves before serving; spoon the onion sauce over the meat and serve warm.
