Ingredients
- Pork — 600 g
- Soy sauce — 1 pcs
- Sugar — 1 tsp
- Onion — 1 pcs
- Garlic clove — 1 pcs
- Chilli peppers — 2 pcs
- Vegetable oil — 1 pcs
- Butter — 1 pcs
- Salt — 1 pcs
- Black pepper — 1 pcs
- Oyster sauce — 1 pcs
- Ramiro pepper — 1 pcs
- Water — 100 ml
- Green onions — 1 pcs
Steps
- Make the marinade by combining soy sauce, sugar, a pinch of salt and black pepper, chopped onion, and crushed garlic; add chopped chillies if using.
- Marinate the pork in the mixture for 30 minutes.
- Heat vegetable oil and a knob of butter in a wide skillet over medium-high heat.
- Sear the marinated pork on both sides until browned.
- Add the remaining chopped onion, crushed garlic and chillies to the pan and sauté briefly.
- Pour in 100 ml water, stir in oyster sauce and add the Ramiro pepper; reduce heat, cover and simmer gently for 30–35 minutes until the pork is cooked through and sauce has reduced.
- Near the end of cooking, scatter sliced green onions over the pork and adjust seasoning with salt and pepper.
- Serve the pork hot with the prepared rice and green salad.
Seasoned Rice
- Rice — 200 g
- Salt — 1 tsp
- Lime juice — 1 pcs
- Lemon juice — 1 pcs
- Cilantro — 1 pcs
- Rinse the rice until the water runs clear.
- Cook the rice until tender according to package proportions.
- Season the cooked rice with salt and finish with a little lime or lemon juice and chopped cilantro before serving.
Green Salad
- Green salad — 1 pcs
- Cucumber — 1 pcs
- Red onion — 0.5 pcs
- Garlic clove — 1 pcs
- Dill — 1 pcs
- Wine vinegar — 1 pcs
- Olive oil — 1 pcs
- Salt — 1 pcs
- Black pepper — 1 pcs
- Thinly slice the cucumber and red onion; finely chop the dill and mince the garlic.
- Place the greens, cucumber, onion, dill and garlic in a bowl.
- Dress with wine vinegar and olive oil, season with salt and black pepper, and toss to combine.
