Styrian Breaded Chicken Salad
The "Steirischer Backhendlsalat" is a speciality of Styria. It features its famous pumpkin seed oil, also known as the 'green gold' of Styria.

- eggs
- of salt
- Coarse-ground flour and bread-crumbs to coat the chicken
- Clarified butter and/or plant oil for frying
- fresh lettuce
- ca. 1 tbsp Styrian balsamic apple vinegar or other vinegar
- ca. 3 tbsp Styrian pumpkin seed oil
- splash of 1 strong, slightly warmed vegetable or beef stock
- of pepper
- of hot mustard
- cherry tomatoes for the garnish
