Ingredients

  • Sushi rice — 250 g
  • Rice vinegar — 1 tbsp
  • Sugar — 2 tsp
  • Salt — 0.5 tsp
  • Shrimp — 400 g
  • Cucumber — 1 pcs
  • Cream cheese — 300 g
  • Nori sheets — 8 pcs
  • Shrimp paste — 160 g
  • Eggs — 2 pcs
  • Plain flour — 2 tbsp
  • Panko breadcrumbs
  • Teriyaki sauce

Steps

  1. Rinse the sushi rice 3–4 times until the water runs clearer, then cook the rice for 25 minutes using a 1:2 rice-to-water ratio.
  2. While the rice is warm, mix the rice vinegar with the sugar and salt, then fold this dressing into the rice and mix to season.
  3. Place a sheet of nori on a work surface. Put a ball of the seasoned rice on the nori and spread it into a thin layer.
  4. On top of the rice layer, spread some cream cheese, add a portion of shrimp paste, arrange some shrimp and a few slices of cucumber, then top with another thin layer of rice.
  5. Moisten the edges of the nori with a little water, roll up as in the video, place another nori sheet over the roll and form it into a compact burger shape.
  6. Wrap each formed burger tightly in plastic wrap and let rest for 15 minutes.
  7. While the burgers are resting, prepare the batter by mixing the eggs with the flour until combined.
  8. Unwrap each burger, dip it into the egg-and-flour batter, then generously coat it all over with panko breadcrumbs.
  9. Air-fry the breaded burgers at 200°C for 15 minutes until crisp.
  10. Cut each burger in half and drizzle or brush with teriyaki sauce before serving.
