Ingredients
- Sushi rice — 250 g
- Rice vinegar — 1 tbsp
- Sugar — 2 tsp
- Salt — 0.5 tsp
- Shrimp — 400 g
- Cucumber — 1 pcs
- Cream cheese — 300 g
- Nori sheets — 8 pcs
- Shrimp paste — 160 g
- Eggs — 2 pcs
- Plain flour — 2 tbsp
- Panko breadcrumbs
- Teriyaki sauce
Steps
- Rinse the sushi rice 3–4 times until the water runs clearer, then cook the rice for 25 minutes using a 1:2 rice-to-water ratio.
- While the rice is warm, mix the rice vinegar with the sugar and salt, then fold this dressing into the rice and mix to season.
- Place a sheet of nori on a work surface. Put a ball of the seasoned rice on the nori and spread it into a thin layer.
- On top of the rice layer, spread some cream cheese, add a portion of shrimp paste, arrange some shrimp and a few slices of cucumber, then top with another thin layer of rice.
- Moisten the edges of the nori with a little water, roll up as in the video, place another nori sheet over the roll and form it into a compact burger shape.
- Wrap each formed burger tightly in plastic wrap and let rest for 15 minutes.
- While the burgers are resting, prepare the batter by mixing the eggs with the flour until combined.
- Unwrap each burger, dip it into the egg-and-flour batter, then generously coat it all over with panko breadcrumbs.
- Air-fry the breaded burgers at 200°C for 15 minutes until crisp.
- Cut each burger in half and drizzle or brush with teriyaki sauce before serving.
