- stewing beef or skirt, cut into 3cm cubes
- olive oil and a knob of butter
- garlic
- whole shallots, peeled
- litre beef or chicken stock
- red wine vinegar
- balsamic vinegar
- juniper berries, crushed
- ground allspice
- brown sugar
- Half a red chilli, finely diced
- Sea salt, black pepper
- small uncooked beetroots, peeled and halved
- crème fraiche
- dry mustard
- creamed horseradish
- flour mixed with 1tbsp butter
