Restaurant-Style Syrniki with Fine-Grained Farmer's Cheese

Ingredients

  • Fine-grained farmer's cheese — 360 g
  • Egg yolk — 1 pcs
  • Sugar — 1 tbsp
  • Vanilla sugar — 10 g
  • Flour — 1 tbsp
  • Flour

Steps

  1. In a deep bowl, mix the fine-grained farmer's cheese with vanilla sugar, regular sugar, egg yolk, and 1 tablespoon of flour; knead with your hands or a fork until a homogeneous, sticky mixture.
  2. Dust the work surface with flour. Measure out approximately one tablespoon of the cheese mixture, form it into a ball, place it on the floured surface, and gently shape it into a flat syrnik with your hands or palm; repeat with the entire mixture.
  3. Transfer the shaped syrniki onto parchment paper in a single layer and place them in the freezer; freeze until solid (e.g., overnight).
  4. In the morning, take out the frozen syrniki and fry them in a pan with a small amount of oil over medium heat: fry each side until golden and crispy — thanks to freezing, the syrniki do not fall apart and remain tender inside.
  5. Serve hot with your favorite topping — optionally delicious with salted caramel or berries.
