Sausage Biscuits

Ingredients

  • All-purpose flour — 2 cup
  • Baking powder — 1 tbsp
  • Baking soda — 0.5 tsp
  • Salt — 1 tsp
  • Cold butter, cubed — 6 tbsp
  • Cold buttermilk — 0.75 cup
  • Cheddar or American cheese, sliced (optional)

Steps

  1. Preheat oven to 220°C (425°F). Prepare a baking sheet.
  2. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or a fork until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.
  4. Pour in the cold buttermilk and mix until just combined, being careful not to overmix. Turn the dough out onto a lightly floured surface and gently fold it a few times to bring it together.
  5. Roll the dough to about 2.5 cm (1 inch) thickness and cut out rounds with a biscuit cutter. Place them on the prepared baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits are cooked through. Remove from oven and let cool slightly.
  7. While the biscuits are still warm, slice them horizontally. Place a sausage patty on the bottom half. If desired, add a slice of cheese and let it melt slightly on the warm biscuit. Top with the other half of the biscuit and serve immediately while hot.

Sausage Patties

  • Breakfast sausage — 454 g
  1. Take the sausage and form it into patties, slightly larger than the biscuits (accounting for shrinkage during cooking).
  2. Heat a skillet over medium heat. Place the patties in the skillet and cook for 3-4 minutes per side, until golden brown and cooked through.
  3. Once cooked, remove and drain any excess grease on paper towels.
