- olive oil
- tablespoons fresh lemon juice from 1 lemon, plus 1 additional lemon cut into wed
- tablespoons red wine vinegar
- teaspoons freshly minced garlic
- teaspoons dried oregano
- teaspoon finely chopped fresh mint leaves
- Kosher salt and freshly ground black pepper
- pound halloumi cheese, cut into 3/4-inch cubes
- medium zucchini, cut into into 1/2-inch rounds
- medium red onions, peeled and cut into 3/4-inch chunks
