Ingredients

  • olive oil
  • tablespoons fresh lemon juice from 1 lemon, plus 1 additional lemon cut into wed
  • tablespoons red wine vinegar
  • teaspoons freshly minced garlic
  • teaspoons dried oregano
  • teaspoon finely chopped fresh mint leaves
  • Kosher salt and freshly ground black pepper
  • pound halloumi cheese, cut into 3/4-inch cubes
  • medium zucchini, cut into into 1/2-inch rounds
  • medium red onions, peeled and cut into 3/4-inch chunks
  • pint grape tomatoes
  • Wooden skewers, soaked in water for at least 30 minutes prior to use
  • Tzatziki, for serving
  • Pita, warmed, for serving
