Chicken and Broccoli Patties

Pan-fried chopped chicken patties made with raw pulsed broccoli, bell pepper and hard cheese, bound with egg and sour cream.

Ingredients

  • Chicken fillets — 2 pcs
  • Broccoli (raw) — 0.5 pcs
  • Bell pepper — 0.5 pcs
  • Hard cheese — 100 g
  • Egg — 1 pcs
  • Sour cream — 3 tbsp
  • Salt — 1 tsp
  • Oil for frying

Steps

  1. Place the raw broccoli in a blender and pulse in short bursts until it is coarsely chopped (crumbly); transfer to a mixing bowl. Pulse or grate the hard cheese and add it to the bowl.
  2. Finely chop the bell pepper and finely chop the chicken fillets by knife (do not grind); chopping the chicken rather than mincing helps the patties stay juicier. Add both to the bowl with the broccoli and cheese.
  3. Add the egg, sour cream and salt to the bowl and mix everything until evenly combined and the mixture holds together when pressed.
  4. Shape the mixture into patties of the desired size using your hands.
  5. Heat a thin layer of oil in a skillet over medium heat. Fry the patties in batches, turning once, until golden on both sides and cooked through.
  6. Transfer the cooked patties to paper towel to drain briefly and serve warm.
