Candied Ginger

One of my favorite forms of ginger is crystallized ginger, which has been candied or cured in sugar. And it's almost as easy to make as it is to buy. Now that you will soon have plenty of candied or crystallized ginger, what might you do with it? Well, it is ideal in baked goods (like gingersnaps), but it's also darned tasty on ice cream, breakfast cereal, salads, and just for out-of-hand eating.
