Juicy Fried Pork Belly in Homemade Sauce

Pork belly is pan-fried until golden, then simmered in a wine–soy caramel sauce until tender and juicy.

Ingredients

  • Pork belly — 1000 g
  • Onion — 1 pcs
  • Garlic cloves — 3 pcs
  • Dry white wine — 150 ml
  • Soy sauce — 60 ml
  • Olive oil — 2 tbsp
  • Sugar — 1 tbsp
  • Wine vinegar — 1 tbsp
  • Dried ginger — 0.5 tsp
  • Chili flakes — 0.5 tsp
  • Salt — 1 g

Steps

  1. Trim and slice the pork belly into even pieces.
  2. Heat a pan and fry the pork belly in batches until golden brown on all sides; transfer to a plate.
  3. Finely chop the onion and mince the garlic.
  4. Add the onion and garlic to the pan and sauté, stirring, for about 3 minutes.
  5. Add the dry white wine, soy sauce, olive oil, sugar, wine vinegar, dried ginger and chili flakes to the pan and stir to combine.
  6. Return the fried pork belly to the pan, add salt, pour the sauce over the meat, cover and simmer on low heat until the pork is tender (about 40 minutes).
  7. Serve hot.
