Turkish Bagels with Sesame

These Turkish bagels are lovely with tea or other drinks, and they can stand in for bread as well. They are easy to make, and after baking they take on a bright, sunny, crisp crust finished with sesame seeds. Press one and the shell crumbles while the porous crumb gives way beneath your finger. They are a good choice for anyone who has to avoid rye products. The dough is made from flour, warm water, yeast, sugar, salt, butter and vegetable oil, and a turmeric-and-honey glaze with sesame seeds gives them their distinctive Turkish character.
