Imeretian Khachapuri is the iconic Georgian cheese flatbread – a soft yeast pastry filled with several types of cheese, always including the brined Imeretian cheese that gives the dish its name and character. Georgian cuisine is full of flatbread variations, and this Imeretian version is among the most beloved. The total time comes to about 3 hours and the recipe yields 8 servings, or 4 large flatbreads. They are best stacked and brushed with melted butter as they come out of the oven, which leaves them soft, cheesy and hard to resist.
