Chai Spice Pumpkin Pie
This twist on traditional pumpkin pie filling adds chai spices (ginger, cardamom and cinnamon). Using cake flour is great for pie dough because it makes for an especially tender crust!

- PIE SHELL
- Swans Down®️ Cake Flour
- teaspoon kosher salt
- teaspoons sugar
- sticks unsalted butter, cubed and refrigerator cold
- to 1/4 cup ice-cold water
- FILLING
- ounces plain pumpkin puree
- light brown sugar, packed
- teaspoon ground black pepper
- teaspoon ground cardamom
- teaspoon ground cinnamon
- teaspoon ground cloves
- teaspoon ground nutmeg
- teaspoon ground ginger
- large eggs
- can evaporated milk
- egg + 1 tablespoon water, whisked, for egg wash
- Whipped cream, for garnish
