Grilled Oysters with Chipotle Glaze
Seafood Watch recommends using farmed oysters, which can be grown in protected areas and harvested with minimal environmental impact. Have your fishmonger do the shucking if you like; just ask that the juices be saved. Prep and Cook Time: about 1 hour. Notes: If glaze stiffens, set it on the hot grill for a minute. Find rock salt at most large grocery stores.

- tablespoons plus 2 tsp. fresh lime juice
- tablespoons olive oil
- tablespoon tequila
- teaspoon minced cilantro
- teaspoon coarse sea salt or kosher salt
- teaspoon freshly ground black pepper
- farm-raised oysters on the half-shell, juices retained
- tablespoons unsalted butter, softened
- tablespoons mayonnaise
- canned chipotle chile in adobo sauce, minced, plus 1 1/2 tsp. sauce
- teaspoon minced fresh lime zest
- At least 2 cups rock salt for lining platter
- Canola-oil cooking spray
