- pounds Yukon Gold or other yellow potatoes, washed
- strips thick cut bacon, chopped
- garlic, thinly sliced
- yellow onion, small diced
- red bell pepper, small diced
- yellow bell pepper, small diced
- Blue Plate® Hot & Spicy Mayonnaise
- tablespoon apple cider vinegar
- tablespoons fresh parsley, chopped
- teaspoon coarse grain mustard
- teaspoon coarse salt, plus extra for boiling potatoes
- bunch green onions, cut on a bias, for garnish
