Fish Tacos with Elote and Pickled Red Onions
Fresh corn will always remind me of summer, corn on the cob, Mexican street corn, corn salsa, and here we have elote. This cheesy, creamy corn dip goes great on tacos, especially fresh fish tacos! The freshness of the corn pairs perfectly with the cheese and spice from the chipotle powder and creates such an amazing bite with the fish and crispy tortilla. The flavors from the Jalapeno Sea Salt, Key Lime Balsamic and Chipotle Olive Oil really give the dish some great depth and flavor!
