Diet Meal Recipes: Smoked Salmon and Spinach Spelt Pancakes
This is like a giant smoked-salmon-topped blini and great for breakfast, brunch or even lunch. Spelt makes a nice change and has a sweet nutty flavour, but regular flour can be used in its place if you prefer. The pancake is easy to make and cooks quickly but is nonetheless impressive. A note from Eatopic: If you don’t have time to make the pancakes try toasted spelt bread or even share a wholemeal bagel if you like.
