Crunchy Avocado Cucumber Salad

A light, crunchy salad of shaved cucumbers, avocado, pomegranate seeds and toasted walnuts dressed with lemon, olive oil and sumac.

Ingredients

  • Large seedless cucumber — 2 pcs
  • Mini seedless cucumber — 4 pcs
  • Small red onion — 0.5 pcs
  • Avocado — 2 pcs
  • Toasted walnuts, chopped — 60 g
  • Pomegranate seeds — 90 g
  • Fresh parsley, finely chopped — 15 g
  • Lemon (zest and juice) — 1 pcs
  • Olive oil — 2.5 tbsp
  • Salt
  • Black pepper
  • Sumac — 1.5 tsp

Steps

  1. Thinly shave or slice the cucumbers (use 2 large seedless cucumbers or 4–6 mini seedless cucumbers) and place them in a large bowl.
  2. Add the sliced small red onion and the avocado cut into small cubes.
  3. Add the chopped toasted walnuts and the pomegranate seeds.
  4. Stir in the finely chopped fresh parsley.
  5. Add the lemon zest and lemon juice, drizzle with olive oil, then season with salt, black pepper and sumac; gently toss until everything is evenly coated.
  6. Serve immediately for best freshness.
