Cardamom Amaranth Granola
Cardamom Amaranth Granola is a nice change from the normal cinnamon type granola. It’s easy to make and SO good to eat! I discovered Kind Granola Clusters a while back. I noticed they have amaranth in them (the tiny little ball like grain), so when I came across this recipe for homemade granola with amaranth, I knew I had to try it. Add the cardamom changes up the flavor profile from the usual. It has a more floral note than the spicy cinnamon we consumers are used to. However, it’s a nice change. This granola recipe came from Bob’s Red Mill Everyday Gluten-Free Cookbook: 281 Delicious Whole-Grain Recipes. I totally recommend the cookbook for any of you who are 1. gluten-free, 2. adventurous in the grocery store, buying fun new grains, but who then get home and don’t know what to do with them, or 3. into whole grains, have knowledge but want to add to their repertoire.
