Ingredients
- dried black eyed peas
- garlic cloves
- medium yellow onion
- celery stalk
- bay leaves
- frozen green peas
- Blue Plate Mayonnaise
- lemon, zested and juiced
- tablespoons chopped parsley
- tablespoon chopped chives
- teaspoon chopped fresh thyme
- teaspoon chopped fresh tarragon
- teaspoon chopped fresh rosemary
- sugar snap or snow peas, veins removed from pods and cut into medium diced segme
- diced red onion
- grated carrot
- grated white cheddar cheese
- hardboiled eggs, finely grated
- capers, pan fried in shallow oil until crispy
- Salt, to taste
- Black pepper, to taste
