Mexican-Style Black Bean Shakshouka
This recipe is from chef and 2024 Master Chef champion, Brin Pirathapan, from his cookbook 'Elevate'."I love any dish that feels acceptable to eat at breakfast, lunch or dinner, and this Mexican-style shakshouka is just that. I’m not a big fan of large chunks of chorizo in food, but I love using it in this way where the chorizo is blended to a crumb and crisps up slightly when fried. It melts away into the dish, leaving every mouthful with that smoky sausage flavour" - Brin.

- chorizo, cut into chunks
- olive oil
- red onion, diced
- garlic cloves, thinly sliced
- green pepper, deseeded and diced
