Chicken Tikka Masala
Spiced, charred chicken thighs simmered in a cashew and fresh-tomato masala. The sauce is built from blended tomatoes and cashew paste, not passata and cream; the tikkas are properly charred and the kasuri methi goes in last to preserve its character.

- boneless, skinless chicken thighs, cut into 4 cm pieces
- full-fat Greek yogurt
- heaped tsp besan
- Kashmiri chilli powder
- garam masala
- ground coriander
- ground cumin
- turmeric
- ginger-garlic paste
- kasuri methi , crushed
- neutral oil
- Juice of ½ lemon
- salt
- unsalted butter
- bay leaf
- green cardamom pods, lightly crushed
- x 3 cm piece of cinnamon
- medium onions , finely chopped
- medium ripe tomatoes , blended smooth
- raw cashews, soaked in hot water for 20 minutes
- water
- kasuri methi, crushed
- double cream
- caster sugar, or to taste
- Salt to taste
- Small bunch of fresh coriander, roughly torn
