• tbsps olive oil
• garlic clove, crushed
• medium onion, finely chopped
• litres hot vegetable stock
• fresh green pesto
• prawns, cooked peeled
• rocket leaves
• Salt and pepper
• Freshly grated parmesan cheese , to serve
