Tiramisu Financiers
Matty created this dish for Great British Bake Off ™ Series 14. It reimagines tiramisu as an elegant petit four — coffee in the brown-butter crumb and a light soak, a soft dome of mascarpone cream, a glossy dark chocolate ganache and a veil of cocoa. The judges praised the grown-up flavours and the neat, uniform finish; this Fix-It version preserves them while baking the sponge thinner and faster to correct the overbaked, too-thick crumb they flagged.

Ingredients
- FOR THE BROWN BUTTER
- Unsalted butter — 10 tbsp , reduces to ~115 g once browned
- FOR THE FINANCIER BATTER
- Icing sugar — 3/4 cup , sifted
- Ground almonds — 2/3 cup
- All-purpose flour — 1/3 cup , sifted
- Fine salt — 1 pinch
- Egg whites — 4 large , room temperature
- Instant espresso powder — 1 tbsp , dissolved in 1 tsp hot water
- Vanilla extract — 1/2 tsp
- FOR THE COFFEE-LIQUEUR SOAK
- Strong espresso — 3 tbsp , cooled
- Coffee liqueur — 1 tbsp , Kahlúa or Tia Maria
- Caster sugar — 1 tbsp
- FOR THE MASCARPONE CREAM
- Mascarpone — 1/2 cup , cold
- Heavy cream — 1/4 cup , cold
- Icing sugar — 2 tbsp
- Vanilla extract — 1/4 tsp
- FOR THE DARK CHOCOLATE GANACHE
- Heavy cream — 1/3 cup
- Dark chocolate — 3 oz , finely chopped
- Coffee liqueur — 1 tsp
