Matty created this dish for Great British Bake Off ™ Series 14. It reimagines tiramisu as an elegant petit four — coffee in the brown-butter crumb and a light soak, a soft dome of mascarpone cream, a glossy dark chocolate ganache and a veil of cocoa. The judges praised the grown-up flavours and the neat, uniform finish; this Fix-It version preserves them while baking the sponge thinner and faster to correct the overbaked, too-thick crumb they flagged.

Ingredients

  • FOR THE BROWN BUTTER
  • Unsalted butter — 10 tbsp , reduces to ~115 g once browned
  • FOR THE FINANCIER BATTER
  • Icing sugar — 3/4 cup , sifted
  • Ground almonds — 2/3 cup
  • All-purpose flour — 1/3 cup , sifted
  • Fine salt — 1 pinch
  • Egg whites — 4 large , room temperature
  • Instant espresso powder — 1 tbsp , dissolved in 1 tsp hot water
  • Vanilla extract — 1/2 tsp
  • FOR THE COFFEE-LIQUEUR SOAK
  • Strong espresso — 3 tbsp , cooled
  • Coffee liqueur — 1 tbsp , Kahlúa or Tia Maria
  • Caster sugar — 1 tbsp
  • FOR THE MASCARPONE CREAM
  • Mascarpone — 1/2 cup , cold
  • Heavy cream — 1/4 cup , cold
  • Icing sugar — 2 tbsp
  • Vanilla extract — 1/4 tsp
  • FOR THE DARK CHOCOLATE GANACHE
  • Heavy cream — 1/3 cup
  • Dark chocolate — 3 oz , finely chopped
  • Coffee liqueur — 1 tsp
  • TO FINISH
  • Cocoa powder — for dusting
  • Chocolate shards or coffee beans — optional, for decoration
