  • ounces dried bean-thread noodles
  • reduced-sodium chicken broth
  • mirin or cream sherry
  • soy sauce
  • tablespoon sugar
  • to 5 thin slices peeled fresh ginger
  • ounces boned, skinned, chicken thigh meat, trimmed of fat and cut into 1-in. chu
  • small red bell pepper, seeded, stemmed, and cut into thin slices
  • ounces sugar snap or snow peas
  • ounces button mushrooms, sliced
  • ounces firm tofu, drained and cut into 1-in. cubes
  • green onions , cut into 1-in. lengths
  • Sriracha
