- pack of spring mix
- ears raw sweet summer corn, kernels removed
- multicolored cherry tomatoes, halved
- heirloom tomatoes cut into thick slices
- red onion cut into slivers
- avocados -fanned out into slices
- extra virgin olive oil
- shallot, finely chopped
- TBS fresh lemon juice + the zest of 1 lemon
- honey
- TBS red wine vinegar
- chilli flakes
- Coarse salt and black pepper
