The traditional sweet pastries – or ‘chiacchiere’ - made during the Carnival period assume various names: ‘cenci’ and ‘donzelle’ in Tuscany, ‘frappe’ and ‘sfrappole’ in Emilia, ‘crostoli’ in Trentino, ‘galani’ and ‘gale’ in the Veneto, ‘bugie’ in Piedmont and many others besides.
