• floury potatoes, peeled and cut into chunks
• smoked haddock fillet
• tinned sweetcorn kernels
• each fresh chopped parsley and chives
• finely grated lemon rind
• seasoned flour
• large egg, beaten
• fresh white breadcrumbs
• Oil for shallow-frying
• Lemon wedges to serve
