  • litre chicken stock or water
  • stalks lemongrass, bottom 15cm only, bruised and cut into 3cm pieces
  • slices fresh galangal
  • kaffir lime leaves, torn in half
  • bird's eye chillies, bruised
  • raw prawns, peeled and deveined
  • oyster or straw mushrooms, halved
  • tablespoons fish sauce, or to taste
  • tablespoons fresh lime juice
  • teaspoon sugar
  • tablespoons nam prik pao — for the creamy version
  • coconut milk
  • tomato, cut into wedges
  • small bunch fresh coriander, to garnish
  • spring onions, sliced, to garnish
