- litre chicken stock or water
- stalks lemongrass, bottom 15cm only, bruised and cut into 3cm pieces
- slices fresh galangal
- kaffir lime leaves, torn in half
- bird's eye chillies, bruised
- raw prawns, peeled and deveined
- oyster or straw mushrooms, halved
- tablespoons fish sauce, or to taste
- tablespoons fresh lime juice
- teaspoon sugar
- tablespoons nam prik pao — for the creamy version
