Ingredients

• medium scallions, roughly chopped
• extra-virgin olive oil
• tablespoons mild honey
• teaspoons Dijon mustard
• teaspoon grated lemon zest plus 3 tablespoons fresh lemon juice
• teaspoon kosher salt
• teaspoon black pepper
• container baby arugula
• medium carrots, peeled and shaved into thin strips using a vegetable peeler
• small red beets, peeled, trimmed, and very thinly sliced
• medium radishes, trimmed and very thinly sliced
• medium clementines, peeled and sliced crosswise into 1/8-inch-thick rounds
• roughly chopped unsalted almonds, toasted
