Caldosa Cubana
Our very own Willow Valley Communities’ Chef Fernando shares his family’s recipe for a hearty soup named Caldosa Cubana from his home country of Cuba. This hearty soup of chicken, or meats of your choice, potatoes, root vegetables, plantains, and sofrito is easily one of the most famous dishes in Cuba, although it is well known in other countries in South and Central America and the small Caribbean Islands. The word “Caldosa” in Cuban means a time when family and friends gather to tell stories and dance to salsa music.

Ingredients
- chicken, diced
- chorizo sausage, sliced
- smoked ham, diced
- quarts of water
- ears of corn
- yucca root, sliced
- sweet potato, diced
- white or red taro root
- green and 1 yellow plantain, peeled and sliced
- lemons or limes cut into wedges
- butternut squash, peeled and sliced
- medium onion, diced
- garlic
- green bell pepper or ½ cup ajisto pepper
- can tomato sauce
- bay leaves
- olive oil or pork lard
- cumin or adobo seasoning
- chopped cilantro
- salt and pepper to taste
