After making a Turkey Porchetta at Thanksgiving, I decided to adapt it to be a year round dish and this elevated sous vide chicken porchetta was the result.

- teaspoons Kosher salt
- teaspoons freshly ground black pepper
- fresh sage leaves
- medium cloves garlic
- tablespoon whole fennel seeds
- teaspoon red pepper flakes
- large whole boneless, skinless chicken breasts , patted dry
- fully cooked real bacon bits
- or 7 pieces of bacon to wrap the final rolled up chicken
