Pea, courgette and parmesan cheese soup

- olive oil
- courgettes, halved lengthways and sliced into 0.5cm half moons
- garlic clove, finely chopped
- white pepper
- litre fresh chicken stock
- maris piper potatoes, cut into even chunks
- frozen peas
- fresh basil, roughly chopped
- parmesan, finely grated, plus extra to scatter over
- Crusty bread to serve
- For the garnish
- Crème fraîche
- courgette, cut into strips/ribbons , tossed in lemon juice to soften
- Extra-virgin olive oil
