Tomato salad with cottage cheese, bell pepper and nuts

A fresh salad of ripe tomatoes, drained cottage cheese, bell pepper, red onion, herbs and nuts dressed with a lemon‑mustard olive oil vinaigrette.

Ingredients

  • Ripe tomatoes
  • Cottage cheese (drained)
  • Parsley or other fresh herbs
  • Red onion
  • Bell pepper
  • Nuts
  • Olive oil — 2 tbsp
  • Mustard — 0.5 tsp
  • Lemon juice — 1 tsp
  • Salt

Steps

  1. If the cottage cheese contains excess cream or whey, drain it and set aside.
  2. Cut the ripe tomatoes into bite-sized pieces, core and chop the bell pepper, thinly slice the red onion, chop the parsley or other fresh herbs, and roughly chop the nuts.
  3. Whisk together the olive oil, mustard and lemon juice, and season the dressing with salt to taste.
  4. Place the tomatoes, cottage cheese (drained), bell pepper, red onion, parsley or other fresh herbs, and nuts in a large bowl, pour over the dressing and toss gently to combine.
  5. Serve immediately.
