Ingredients
- Ripe tomatoes
- Cottage cheese (drained)
- Parsley or other fresh herbs
- Red onion
- Bell pepper
- Nuts
- Olive oil — 2 tbsp
- Mustard — 0.5 tsp
- Lemon juice — 1 tsp
- Salt
Steps
- If the cottage cheese contains excess cream or whey, drain it and set aside.
- Cut the ripe tomatoes into bite-sized pieces, core and chop the bell pepper, thinly slice the red onion, chop the parsley or other fresh herbs, and roughly chop the nuts.
- Whisk together the olive oil, mustard and lemon juice, and season the dressing with salt to taste.
- Place the tomatoes, cottage cheese (drained), bell pepper, red onion, parsley or other fresh herbs, and nuts in a large bowl, pour over the dressing and toss gently to combine.
- Serve immediately.
