  • teaspoons salt

  • pork butt or shoulder , tied as a roast
  • tablespoons vegetable oil
  • dry white wine
  • tablespoons lemon juice
  • chicken broth
  • to 12 garlic cloves, peeled
  • dried arbol chiles
  • large mild dried chile, such as New Mexico
  • Bosc or Anjou pears
