Ingredients
- x110g packs coconut biscuits
- butter, melted, plus extra butter for greasing
- full fat cream cheese
- mascarpone
- caster sugar
- Juice and zest of 2 limes
- coconut milk
- sheets gelatine, soaked in cold water for a few mins
- passion fruit
- mango coulis
- ripe mango, peeled and sliced
- small ripe pineapple, peeled and sliced
- Toasted coconut shavings , to serve, optional
