Homemade Pork Rillettes

Pork rillettes are a rustic French spread made by slowly cooking pork with fat, aromatics, wine, and stock until the meat falls apart, then mixing it into a rich, coarse, spreadable texture. It is not a smooth pâté, and that is exactly the point. Good rillettes should have little strands of meat, enough fat to stay moist, and a deep slow-cooked pork flavor.

  • dry white wine
  • to 2 cups poultry stock
