Easy Chickpea-sy Broth

Among them was this chickpea dish: a simple broth, melt-in-the-mouth jumbo chickpeas, lots of black pepper, and plenty of olive oil. It was heavenly! When I got home, I had to recreate it—and I’m happy to say this version is pretty much spot on. I’ve added my tahini recipe on here too, not necessary but delicious if you want to  finish with a dollop"

Ingredients

  • medium onions, peeled and sliced into eighths
  • large garlic cloves, grated
  • jars Queen chickpeas - with their bean stock
  • Small bunch fresh bay leaves, optional
  • Greek olive oil, plus more for drizzling - this one works particularly well
  • Juice of 2–3 lemons
  • parsley, picked
  • Bread, to serve
  • blank
  • tahini
  • Greek olive oil - I love this one
  • water
  • lemon / 30g lemon juice
  • salt
