Triple Schezwan fried rice

This is an extremely popular street food in Mumbai and available in almost all college and office canteens. A mixture of precooked noodles and rice are tossed with spicy Indian style Schezwan sauce with vegetables and served with a soy sauce based gravy and topped with fried noodles.

  • to 6 Kashmiri chilies
  • to 10 spicy red chilies
  • local sichuan pepper
  • shallot chopped
  • chopped garlic
  • to 4 tbsp of oil
  • vinegar
  • Salt to taste
  • sugar
  • tomato ketchup
  • boiled rice
  • packet boiled noodles
  • onion sliced
  • to 10 garlic finely chopped
  • carrot cut into strips
  • bell pepper cut into strips
  • cabbage shredded
  • Beans cut into slits
  • schezwan sauce
  • green chilies chopped
  • celery stalk finely chopped
  • garlic crushed
  • soy sauce
  • cayenne pepper
  • oil 1 tbsp
  • water
  • cornflour dissolved
  • spring onion chopped
