Light Jamaican Black Cake with Strawberries and Cream

Light Jamaican Black Cake with Strawberries and Cream

In the very first episode of the Great British Bake Off, Annetha Mills introduced the tent to her cultural fusion: a Jamaican black cake crowned with strawberries and cream. "This is most definitely a fusion of both of my British culture and my West Indian culture," she explained. When Mary Berry asked about the moisture, Annetha smiled: "Well, that's the rum and the wines. It's part of how you'd make the 'wow.'" Paul Hollywood was captivated: "Really nice. You hit the fruit, you taste the molasses, the softness of the creams there and then bang, bang." Mary's verdict: "That's absolutely delicious."
