Chicken Biryani

Chicken Biryani is a delicious savory rice dish that is loaded with spicy marinated Chicken, caramelized onions, and flavorful Saffron Rice. Although widely associated with Indian cuisine, Chicken Biryani is a dish that has spread across a wide swath of South Asia, reaching as far west as Iraq and as far east as Indonesia. You can serve Chicken Biryani with cooling raita made with yogurt, mint, coriander, and a pinch of salt, but this is also good with a variety of different chutneys.

Ingredients

  • and 1/2 cups Basmati Rice, washed and soaked
  • teaspoon Cumin Seeds
  • and 1/2 tablespoon Salt
  • Boneless Chicken pieces
  • Vegetable Oil
  • medium Onions, peeled and sliced
  • whole Garlic Bulb, peeled
  • inch-piece Ginger, peeled and roughly chopped
  • finely chopped medium sized Tomatoes
  • and 1/2 cup Plain Yoghurt
  • tablespoons Kewra water
  • teaspoon Red Chilli powder or depending on the kind of pungency you require
  • teaspoon of Turmeric powder
  • tablespoon of Coriander powder
  • tablespoons of freshly ground LIVING BEYOND's Biryani Masala
  • teaspoon of freshly ground LIVING BEYOND's Garam Masala
  • A pinch of edible Yellow food colour
  • Green chilies
  • dried Prunes
  • teaspoon Salt, or to taste
  • Lemon, sliced into rounds
  • big Potatoes cut round and mixed with Salt & Pepper
  • tablespoons of Ghee
  • Coriander Leaves for seasoning
  • Extra Cumin Seeds to layer
