- pound beets, with stems and tails removed
- teaspoons olive oil
- of red pepper flakes
- of salt and pepper to taste
- tablespoon lemon juice
- tablespoon rice vinegar
- tablespoon cooking sherry

- baby lettuce
- of a watermelon, thinly sliced and cut into triangles
- crumbled blue cheese
