- navel oranges, juiced and rinds reserved
- sticks unsalted butter, at room temperature
- turkey, giblets removed
- small onion, roughly chopped
- head garlic, cloves peeled and crushed
- stalk celery, roughly chopped
- bunch each oregano, sage and rosemary, tied in a bundle
