Cherry and Coconut Flapjacks
Nadia created this dish for Great British Bake Off ™ Series 16. For Back-to-School Week's Signature, she reimagined a childhood coconut-and-chocolate bar as a chewy coconut flapjack layered with her own cherry jam beneath a tempered chocolate top. The judges praised the cherry as perfect and thought the flapjacks looked lovely. This Fix-It revision preserves those praised elements while correcting the two named faults - a thin, properly tempered chocolate layer that sets cleanly, and toasted coconut that reads clearly against it.

- Cherries, pitted - 2 1/2 cups , fresh or frozen

- Lemon juice - 1 tbsp
