Caramelized Onion Spinach and Artichoke Dip

- tablespoons olive oil
- medium Spanish yellow onions, thinly sliced
- teaspoons diamond crystal kosher salt
- minced garlic
- cream cheese
- sour cream
- tablespoons mayonnaise
- freshly grated gruyere cheese
- freshly grated low-moisture mozzarella
- frozen spinach, thawed , water pressed out , and chopped
- artichoke hearts, drained and chopped
- Freshly grated black pepper, to taste
- Red pepper flakes, to taste
