Ingredients

• lbs. boneless skinless chicken breast, cooked and shredded
• tablespoon coconut oil
• red onion, thinly sliced
• garlic cloves, minced
• tablespoon minced fresh ginger
• tablespoons red curry paste
• chicken broth
• carrots, sliced
• green beans or snow peas
• red pepper, julienned
• brown rice noodles
• coconut milk
• tablespoons of fresh lime juice
• fresh cilantro diced
• Optional: top with sliced avocado and sliced green onions
